# Directions:
01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - In a large mixing bowl, toss carrots with olive oil, melted butter, maple syrup, ground cinnamon, sea salt, and black pepper until well coated.
03 - Spread glazed carrots in a single layer on the prepared baking sheet.
04 - Roast carrots for 20 to 25 minutes, stirring once halfway through, until tender and lightly caramelized at the edges.
05 - While carrots roast, toast pepitas in a dry skillet over medium heat for 2 to 3 minutes, stirring frequently, until golden and aromatic. Remove from heat.
06 - Transfer roasted carrots to a serving platter. Top with toasted pepitas and sprinkle with chopped parsley, if desired. Serve immediately while warm.
