09 - 1 loaf Italian or French bread (about 14 oz), sliced into 1-inch pieces
10 - 3 tablespoons unsalted butter, melted
11 - 3 cloves garlic, minced
12 - 1 tablespoon chopped fresh parsley
→ Assembly
13 - 2 cups marinara sauce
14 - 2 cups shredded mozzarella cheese
15 - 1/2 cup grated Parmesan cheese
# Directions:
01 - Preheat oven to 375°F. Grease a 9x13-inch baking dish.
02 - Place flour in one bowl, beaten eggs in a second, and mix breadcrumbs, Parmesan, salt, and pepper in a third. Coat chicken pieces in flour, then egg, then breadcrumb mixture.
03 - Heat olive oil in a large skillet over medium-high heat. Fry breaded chicken in batches until golden brown, about 4-5 minutes per batch. Drain on paper towels.
04 - Combine melted butter, garlic, and parsley. Brush both sides of bread slices with mixture. Arrange in a single layer in the baking dish.
05 - Bake the bread base for 8 minutes until golden and fragrant. Remove from oven.
06 - Spread half the marinara sauce over bread. Layer fried chicken atop sauce and bread. Pour remaining marinara on top and sprinkle mozzarella and Parmesan cheese evenly.
07 - Bake uncovered for 20-25 minutes until cheese is bubbly and golden.
08 - Allow to cool slightly before serving. Garnish with additional parsley if desired.
